Time flies by so fast that sometimes I can’t even remember what month it is.
If only there were something to help me remember.
I can’t really think of a better way to celebrate Oktober than with a variety of festive brews.
Unless its by slathering Oktoberfest Beer Mustard on everything I eat.
OKTOBERFEST BEER MUSTARD
Tidbit: This is an incredibly easy recipe but requires some soaking time overnight so plan accordingly.
1 1/2 cups mustard seeds
1 (12 oz) bottle Oktoberfest beer
1 cup apple cider vinegar
2 tablespoons of honey
1 tablespoon salt
1 teaspoon turmeric
1 teaspoon all-spice
Combine ingredients in a large bowl and soak 8 hours or overnight at room temperature.
The mustard seeds will absorb quite a bit of the liquid.
Pour mixture into a high speed blender of food processor and blend until desired consistency.
Transfer to air-tight containers and store in the refrigerator for up to six months.
Oktbober, ahem, October also happens to be Vegetarian Awareness Month.
And the 10th challenge in the 12 CHALLENGES OF 2012.
This month I’m challenging YOU.
I challenge you to go vegetarian for one meal, one day, one week, or even the whole month.
Vegetarians make a conscious effort to avoid chicken, beef, pork and fish for health or ethical reasons.
Some vegetarians continue eating dairy and eggs.
Others choose to exclude all animals and animal bi-products.
For those of you that want to do something good for animals, for the planet, and for your body, here are some helpful links to help get you started.

I will consider this challenge a success if at least one person decides to participate.
Especially my brother in law who is probably hunting down Bambi as we speak.
